Due to their high collagen content, rib fingers are naturally tough and require **low-and-slow cooking methods** to break down connective tissue into gelatin. Ideal techniques include **braising** (2–2.5 hours until fork-tender), **smoking** (indirect heat at 250°F–275°F for 3+ hours), or **sous-vide** cooking. Grilling them hot and fast is possible but often results in chewy meat unless sliced thinly against the grain for stir-fries or Philly cheesesteaks.

Key preparation tips include **trimming excess fat** to balance richness, **removing the tough back membrane** for better texture, and **serving with acidic or creamy sides** like mashed potatoes, rice, or coleslaw to cut through the meat’s juiciness. They are versatile across cuisines, fitting well in Korean gochujang glazes, American BBQ sandwiches, or French-style braises.
